Ingredients
1 pig’s head (3-4 kilos)
4-5 cloves of garlic, thickly sliced
10 bay leaves
1 coffee cup of vinegar
A small handful of whole peppercorns
Salt
For garnish:
2 hard-boiled eggs and 2 boiled carrots, sliced.
Method
Clean the head well, remove the bristles, then boil well (not the bristles). Allow to cool and keep aside the juices. Remove the bones from the head, cut meat into cubes and return it to pan with the juices to re-boil. Add the garlic, the bay leaves, the vinegar, the peppercorns and the salt.
Arrange the sliced carrots and eggs into a pleasing pattern in a mould, add the meat and cover with the juice. After cooling, place in fridge.
