Ingredients
2 eggs
1¼ cups coconut cream
¾ cup sugar
¼ cup evaporated milk
¼ cup thick pandanus juice
Special utensil: – a double boiler
Method
Break the eggs and beat well. Add coconut cream and sugar; stir until sugar dissolves. Pour the mixture into a double boiler, place over heat and stir until thickened.
Add the milk and continue boiling. Then, add the pandanus juice, stirring to mix. Boil until the mixture thickens, remove from the heat.
Serve with hot-steamed bread as a dip or spread.
