Chicken Kebabs

3 boneless chicken breasts, skinned
1 small onion
2 garlic cloves
2 tablespoons vegetable oil
2 teaspoons curry paste
2 tablespoons smooth peanut butter
Grated rind and juice of 1 lime
2 teaspoons caster sugar
Salt and pepper
Slice of lime, to garnish

1 Preheat oven to 200°C (400°F/ Gas 6). Roughly dice the chicken. Finely chop onion. Crush garlic.

2 Mix together oil, onion, garlic, curry, peanut butter, lime rind and juice, sugar, salt and pepper.

3 Add chicken and stir well. Put 2-3 pieces of chicken on to wooden cocktail sticks.

4 Arrange in a single layer in an ovenproof dish and bake for about 15 minutes, until golden. Serve warm, garnished with lime slices.
