Egg Florentine
Ingredients
12 oz. leaf spinach
4 eggs
Salt, pepper
½ oz. (1 tablespoon) butter

Method
Put the spinach in a heat resistant serving dish and defrost if frozen. Drain away any excess liquid. Make 4 indentations in the spinach and break an egg carefully into each. Season with salt and pepper and dot with butter. Cover and cook on HIGH for 6-8 minutes until the eggs are cooked. Serve at once.
