Jammy Toast
Ingredients
75g/3oz/6 tbsp butter
A little natural vanilla essence (extract)
grated rind of 1 lemon (optional)
4 slices bread
20ml/4 tsp jam (jelly)

Method
1. Cream the butter with vanilla to taste until thoroughly combined. Mix in the lemon rind, if using.
2. Toast the bread on both sides. Serve piping hot or leave to cool on a rack until crisp if preferred. Spread thickly with flavoured butter and jam, and eat at once.
