Fried Pies With Spices And Honey


2 cups hard flour
2 tbsp lemon juice
1 tbsp raki or grappa
1 tsp cardamon seeds
tsp salt
1 tbsp olive oil
A little rosewater
Olive oil or sun-flower seed oil (for frying)


tsp cloves (grated)
1 tsp cardamon seeds
1 tsp orange rind (grated)
1 tbsp roasted sesame
2 tbsp almonds, finely grated


1. Pour the flour in a large bowl and make a well in the middle to add the cardamon seeds, olive oil, salt, lemon juice and raki/grappa.

2. Add a little lukewarm water and start kneading until the dough is hard and homogenous. Let the dough rest for 20 minutes. In the meanwhile mix the cloves with the cardamon seeds, grated orange, roasted sesame and almonds.

3. Divide the dough in small pieces. Roll out each piece to small pies 6-8 cm in diameter and 1 cm thick. Fry the pies in scalding hot oil until they are golden brown on both sides. When done, remove the pies from the skillet and let them cool down on a large dish with absorbent kitchen paper.

4. Remove the kitchen paper and sprinkle the pies with the mixture of spices and pour the honey over.
