Spanish Fish Parcels
Ingredients
750 g (1½ lb) coley, cod or haddock fillet, cut into 4 pieces
1 tablespoon olive oil
½ each red and green pepper, cored, seeded and chopped
4 spring onions, chopped
2 large tomatoes, skinned, seeded and chopped
2 celery sticks, chopped
1 clove garlic, crushed
Salt and pepper to taste
Flat leaf parsley to garnish

Serves: 4
Method
Place each piece of fish on a large piece of greaseproof paper.
Mix the remaining ingredients together in a howl, cover and cook on HIGH for 3 minutes. Divide between the fish.
Wrap each piece of fish in its paper to make a parcel. Place in a dish and cook on HIGH for 7 minutes.
Unwrap each parcel and carefully lift the fish onto a warmed serving plate. Spoon the vegetables on top. Garnish with flat leaf parsley to serve.
