Carrot And Cheese Ring
This vegetable dish would make a good accompaniment to a vegetarian meal. It is also quite delicious cold.
Ingredients
750 g (1½ lb) carrots, grated
3 spring onions, chopped finely
50 g (2 oz) Red Leicester cheese, grated
3 tablespoons milk
1 egg, beaten
2 tablespoons chopped parsley
Salt and pepper to taste
Watercress sprigs to garnish

Serves: 6
Method
Place the carrots in a bowl, cover and cook on HIGH for 5 minutes.
Add the remaining ingredients, then spoon into a greased 1 litre (1¾ pint) ring mould, pressing evenly.
Cover with greaseproof paper and cook on HIGH for 8 minutes. Turn onto a plate and garnish with watercress.

Cooking time: 13 minutes
