Tomato And Potato Bake
Ingredients
350 g (12 oz) potatoes, sliced thinly
1 large onion, sliced
40 g (1½ oz) butter
500 g (1 lb) tomatoes, skinned and sliced
4 tablespoons single cream
½ teaspoon chopped basil
Salt and pepper to taste

Method
Place the potatoes in a large shallow dish with 4 tablespoons water. Place another fitting dish on top and put into it the onion and butter. Place the 2 dishes in the oven and cook on HIGH for 6 minutes, stirring the onion twice during cooking.
Arrange half of the potatoes in a serving dish. Cover with half of the tomatoes, then two thirds of the onion. Spoon over half of the cream and basil, then season with salt and pepper.
Repeat the potato and tomato layers, pile the remaining onion in the centre and spoon the remaining cream over the tomatoes. Season with the remaining basil, salt and pepper, then cook on HIGH for 10 minutes.
Serve with any roast meat.
