Tomato Soup
Ingredients
15ml/1 tablespoon oil
2 carrots, peeled and finely chopped
1 onion, peeled and finely chopped
2.5ml/ ½ teaspoon ground allspice
1.25ml/ ¼ teaspoon ground ginger
2 rashers streaky bacon, rind removed and chopped
2 400g/14oz canned tomatoes
15ml/1 tablespoon sugar
570ml/1 pint/2 cups hot vegetable or chicken stock
Salt
Freshly ground black pepper
30ml/2 tablespoons comflour/cornstarch
60ml/4 tablespoons water
4 tomatoes, skinned and sliced

Method
Put the oil, chopped vegetables, spices and bacon in a large bowl. Cover and cook on HIGH for 4-5 minutes. Add the canned tomatoes, sugar and stock, cover and cook on HIGH for 8-10 minutes or until boiling.
Reduce the setting to MEDIUM and cook for 15 minutes. Puree in a food processor or blender if desired. Season to taste with salt and pepper. Mix the cornflour/ cornstarch and water together and add to the soup along with the sliced tomatoes. Cook, uncovered, on HIGH for 3-5 minutes, stirring once until the soup is thickened slightly.

Microwave cooking time: 15-20 minutes
