Plaice With Herbed Mushrooms

Ingredients

4 large plaice fillets
15g/ ½ oz/1 tablespoon butter
Small clove garlic, peeled and crushed
1 small onion, peeled and finely chopped
225g/8oz mushrooms, finely chopped
Salt
Ground white pepper
2.5ml/ ½ teaspoon chopped penny royal
5ml/1 teaspoon chopped parsley
5ml/1 teaspoon chopped dill
15ml/1 tablespoon cornflour/cornstarch
140ml/ ¼ pint/ ½ cup natural yogurt
1 egg yolk

Garnish:

Chopped parsley

Method

Put the butter, garlic and onion in a small bowl and cook on HIGH for 2 minutes until beginning to soften. Add the mushrooms and herbs, cover and cook on HIGH for 2-4 minutes until the mushrooms are soft.


Season with salt and pepper. Cut the plaice fillets in half, lengthwise, and spread the stuffing over the fillets. Roll up the fillets and place in a circle, seamed side down, in a shallow dish.


Cover and cook on HIGH for 6 minutes or until the fish is cooked. Transfer to a serving dish and keep warm.


Mix the cornflour/ cornstarch with a little of the yogurt, add the remaining yogurt, egg yolk and any cooking liquor, season with salt and pepper, whisk and cook, uncovered, on HIGH for 1-2 minutes, whisking every 30 seconds until thickened slightly.


Serve the fish rolls on a pool of sauce and sprinkle with chopped parsley.
