Potato Cakes
Ingredients
450g/1lb cooked potatoes
1 medium onion, peeled and finely chopped
30ml/2 tablespoons fines herbes
5ml/1 teaspoon oil
Salt
Freshly ground black pepper

Method
Mash the potato, add the onion and herbs; mix well. Divide the potato into four even portions and, using floured hands, form into four rounds about 2.5cm/1 inch thick. Preheat a large browning dish for the manufacturer's recommended time. Add the oil and quickly add the potato cakes, two at a time, and cook on HIGH for 2 minutes.
Carefully turn over and cook on HIGH for a further 2 minutes until golden. Reheat the browning dish for a few minutes and repeat with the remaining potato cakes.
Preparation time: 10 minutes
Microwave cooking time: 4 minutes
