Rosemary Lyonnaise Potatoes
Ingredients
450g/1lb potatoes
30g/1oz/2 tablespoons butter
15ml/1 tablespoon finely chopped rosemary
1 small clove garlic, peeled and crushed
1 small onion, peeled and finely chopped
30rnl/2 tablespoons milk
Salt
Pepper

Method
Peel and thinly slice the potatoes. Put the butter, rosemary, garlic and onions in a 20cm/8 inch shallow dish and cook on HIGH for 3 minutes until soft.
Stir in the milk, salt, pepper and potatoes and mix well. Spread out in the dish. Cover and cook on MEDIUM for 12-15 minutes until the potatoes are soft. Brown under a grill/broiler if desired.
Preparation time: 10 minutes
Microwave cooking time: 12-15 minutes
