Salade Au Fruits De Mer
Ingredients
8 scallops with roes attached
60ml/4 tablespoons water
Squeeze lemon juice
180g/6oz monkfish, cubed
120g/4oz prawns/shrimp
120g/4oz mussels
120g/4oz scampi/langoustines
Dressing:
120g/4oz curd cheese
15-30ml/1-2 tablespoons milk
70ml/4½ tablespoons natural yogurt
Salt
Ground white pepper
Juice of ½ lemon
5ml/1 teaspoon Dijon mustard
5ml/1 teaspoon chilli powder
Pinch cayenne pepper

Serves: 6
Method
Cut the scallops in half, horizontally, place with the monkfish, water and lemon juice in a large bowl. Cover and cook on MEDIUM for 5-8 minutes. Stir in the remaining shellfish and cook on HIGH for 1-2 minutes. Leave to cool in the liquid, then drain well.
Blend the cheese, milk and yogurt together in a food processor or blender, add the lemon juice, salt and pepper, and stir in the mustard and spices. Toss the seafood in the dressing to serve.
Preparation time: 10 minutes plus chilling
Microwave cooking time: 6-10 minutes
