Gingered Swede
Ingredients
450g/1lb swede, peeled
60ml/4 tablespoons water
Salt
Freshly ground white pepper
15g/ ½ oz/1 tablespoon butter
30ml/2 tablespoons fresh ginger, peeled and grated
Garnish:
Fresh ginger, peeled and cut into thin strips

Serves: 4
Method
Cut the swede into small pieces and place in a bowl with the water, salt and pepper. Loosely cover and cook on HIGH for 10-15 minutes or until tender, stirring twice. Drain well and mash thoroughly or puree in a food processor with the butter.
Stir in the ginger. Reheat on HIGH for 1-2 minutes if necessary. Serve hot. Garnish with fresh ginger if desired.
