Cauliflower Purée (Aka 'Fauxtatoes')

This is a wonderful substitute for mashed potatoes if you want something to put a fabulous soured cream gravy on! Feel free, by the way, to use frozen cauliflower instead; it works quite well with this recipe.

Ingredients

1 head fresh or 650 g frozen cauliflower
4 tbsp butter
Salt and freshly ground black pepper


Method

1. Steam or microwave the cauliflower until it's soft.


2. Drain it thoroughly and put it through the blender or food processor until it's well puréed. Add the butter and salt and pepper to taste.

Yield:- 6 generous servings, each with 5 grams of carbohydrate and 2 grams of fibre, for a total of 3 grams of usable carbs and 2 grams of protein
