Christmas Eve - Baked Carp

1 whole carp
1 tbsp butter
1 lemon
Dried herbs
Olive oil or cooking oil
Salt and pepper


1.   Preheat the oven to 350°F (180°C).

2.   Gut the fish, cut off the head, fins, and gills, and clean it, leaving the skin.

3.   Grease the outside and inside of the fish with some butter. Cut a lemon into wedges and squeeze some of the juice over the fish, some on the inside, and leave the wedges inside the fish.

4.   Sprinkle the inside of the fish with some dried herbs like thyme, oregano, basil, etc. Then sprinkle salt and pepper on the inside and outside.

5.   Grease a glass baking dish with a couple of tablespoons of olive oil or cooking oil and place the fish in the dish, covering it with aluminum foil.

6.   Bake in the middle of the oven for about 40 minutes, making sure the fish doesn’t dry out. 

If you’d like the fish to have a more striking presentation, only clean and gut the fish, leaving the head, fins, gill and tail. You can decorate it with some lemon wedges, parsley, dill, mushrooms or onions.
