Ingredients

1 large melon
350 g/ 12 oz strawberries, halved lengthways
Juice of ½ lemon
2 tbsp sugar
Sprig of mint
Juice of 1 orange
100 ml/ 3½ fl oz dry sherry

Method

Halve the melon, remove the seeds, scoop out and chop the flesh. Soak the strawberries in the lemon juice.

 

Boil the sugar and mint in a saucepan, with enough water to just cover, until a syrup forms. Remove the mint and stir in the orange juice and sherry.

 

Arrange the melon and strawberries in individual bowls and pour over the syrup. Garnish with mint. Alternatively, use small melons and arrange the strawberries in the scooped-out half shells.
